This chicken taco recipe is one of the easiest recipes I know. Plus, who doesn’t love tacos!!! This recipe can be adjusted to be low sodium by substituting the chicken broth for low sodium chicken broth, veggie broth, or even water (less flavorful) and using salt-free taco seasoning. It is still delicious this way. Did I mention that it is PCOS friendly recipe? Oh yeah, it is! It is a hit every time I make it for large groups.

Ingredients

  • 1 pound of Chicken
  • 1 cup of Salsa
  • 1 cup of Chicken Broth
  • 1 Taco Seasoning Packet

Directions

  1. Add chicken broth, taco seasoning packet, and salsa into your crockpot first and mix ingredients well.
  2. Add chicken and let cook for 8 hours.
  3. After 4 to 6 hours, you can use a fork to begin to shred the chicken, if it isn’t quite tender in that time don’t fret, give it some more time.
  4. Once your chicken is shredded it is ready to be served how ever you love to eat your tacos.
